#HowtoDudleyHacks: What to Cook When Cooking at Home

Supermarket shopping these days is, shall we say, an adventure. So we are all in on the simplest recipes that make use of low-maintenance ingredients you probably already have on hand. Like this easy-breezy chicken recipe from our DS team mate, Whitney, with a high flavor return on your kitchen-time investment.

Bon appétit!

Honey Balsamic Roasted Chicken

1 package Boneless Skinless chicken breast

1/4 cup Balsamic Vinegar

1/4 cup Honey

1/4 cup Olive Oil

3 tablespoons Soy Sauce

2 tablespoons Minced Garlic

1 Shallot or Small Onion - chopped

1/2 teaspoon dried Thyme

1/2 teaspoon dried Rosemary

A few shakes of Red Pepper Flakes

Salt and Pepper to taste

Beat all ingredients together in a bowl. Pour into gallon size ziplock and marinate sliced chicken breasts for 2-8 hours. (Or you can cover and marinade right in a baking dish.)

To cook, pour chicken breasts and all of marinade into oven-safe baking dish and bake at 400 degrees for about 30 minutes until cooked through.
